Take her to a concert or performance that she would really love and arrange before hand to have the performer pick her out of the front row and bring you guys on stage!

You could be out having a picnic or something and tell her to look up that you can’t read what the plane says.
Have her start reading her proposal!
You may work in a field where you can tell her you have to go away for buisness and arrange for her to fly to where you are (somewhere that just happens to be romantic or a place she’s always wanted to go).
